This soda bread though, you guys. I can't even.
It's like a lemon lavender scone. Only more life changing than that. Which is really saying something.
Just make it, ok? Especially if it's spring. Or a Tuesday. Because Tuesdays are hard and this soda bread makes everything better.
Recipea:
1.5 cups unsweetened soy milk
1.5 tablespoons lemon juice
4 cups flour (can split white/wheat or just use all white)
½ cup sugar
2 teaspoons baking soda
1 teaspoon salt
4 tablespoon vegan margarine
1-2 tablespoons lemon zest
1 teaspoon ground lavender
Preheat oven to 160°c
Lightly grease a baking sheet
In a small bowl, combine the soy milk and lemon juice and set aside. (boom. vegan buttermilk)
In a large bowl, sift together flour, sugar, soda, and salt.
With two knives, cut the butter into dry ingredients.
Add the lemon zest.
Create a well and pour in the milk mixture .
On a lightly floured surface, gently knead until the dough just comes together. Don't overknead or else it will get tough. It will be slightly goopy, don't worry!
Shape into a disc about 1.5 inches high.
Cut an X into the top with a knife and sprinkle with whole lavender and sugar.

Also you can sub the lemon zest and lavender for basically anything else and it's also great. So now you have no excuse.
